This easy creamy potato soup recipe can be made in one pot in 30 minutes. It is loaded with flavor and creamy potatoes making it the perfect comfort food.

Optional toppings: shredded cheddar cheesecrispy bacon, chopped green onions
Instructions
Add the potatoes, onion, and celery to a large pot and cover with water.
Boil until the vegetables are soft.
Pour out half the water into a container, saving it if you need to thin out the soup more.
Turn the burner to medium low.
Add ¼ of butter and 3 tsp of bouillon into the pot, and using a potato masher, mash the vegetable mixture until the desired consistency. If you like a chunkier potato soup, leave some heavier chunks in the mixture. For a creamy texture, use an immersion blender.
Add enough milk to achieve the desired thickness and creaminess of the soup.
Season with salt and pepper. Fresh dill is also a great addition to this soup.
Heat until all ingredients are hot.
Top with toppings. Serve with salad and crusty bread or homemade buns.
