To customize the recipe to suit dietary preferences, swap dairy milk for a plant-based alternative like almond or coconut milk.

Cook all the vegetables in one pot. Add the potatoes, onion, and celery to a large pot and cover with water. Boil until the vegetables are soft. Pour half the water into a container, saving it if you need to thin out the soup more. Add ¼ cup of butter and 3 tsp of chicken bouillon (homemade) to the pot, and using a potato masher, mash the vegetable mixture until the desired consistency. Creamy Potato Soup

This easy creamy potato soup recipe can be made in one pot in 30 minutes. It is loaded with flavor and creamy potatoes making it the perfect comfort food.

Ingredients
  

  • 4 cups peeled and diced potatoes
  • 1 medium onion finely chopped
  • 4-5 celery stocks diced
  • 3 tsp chicken or vegetable bouillon
  • 4 cups water
  • 1 - 1½ cups milk Depends on the desired thickness/creaminess
  • ½ -1 cup heavy cream Depends on the desired thickness/creaminess
  • ¼ cup butter
  • 2 tsp dill optional
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese crispy bacon, chopped green onions

Instructions
 

  • Add the potatoes, onion, and celery to a large pot and cover with water.
  • Boil until the vegetables are soft.

  • Turn the burner to medium low.
  • Add ¼ of butter and 3 tsp of bouillon into the pot, and using a potato masher, mash the vegetable mixture until the desired consistency. If you like a chunkier potato soup, leave some heavier chunks in the mixture. For a creamy texture, use an immersion blender.
  • Add enough milk to achieve the desired thickness and creaminess of the soup.
